My cake of the day is chocolate fudge (bit boring but beggars, or unwilling cooks, can't be choosers). I've got a piece of banoffee cake for tomorrow, then the cupboard is bare and it's back to the cake-hunt.

I made my first ever batch of cupcakes last week - got my cake off the internet and got all the essentials. Even made my butter frosting!! The cakes turned out to make twice the yield and were lovely light and fluffy! Needless to say, they didn't last long... All 24 cupcakes were consumed within 4 days!! And no, I didn't eat them all myself

Ah now fudge cake is one of my son's favourite:-
Ingredients
175g Self raising flour
2 Tbsp Cocoa Powder
1 Tsp Bicarbonate soda
150g Caster sugar
2 Eggs Beaten
150 ml (1/4 pint) Sunflower oil
150 ml (1/4 pint) Semi skimmed milk
2 Tbsp Golden syrup
For the Coating and filling
75g Unsalted butter
175g Icing Sugar
3 Tbsp Cocoa Powder
Drop of Milk
Method
1. Pre-heat oven to 180ºC/350F/Gas Mark 4. Grease and line two 18cm (7 inch) sandwich tins.
2. Sieve the flour, cocoa and Bicarbonate of Soda into a bowl. Add the sugar and mix well.
3. Make a well in the centre and add the syrup, eggs, oil and milk. Beat well with electric whisk until smooth.
4. Spoon the mixture into the two tins and bake for 25 - 30 minutes until risen and firm to the touch. Remove from oven, leave to cool before turning out onto a cooling rack.
5. To make your butter icing, place the butter in a bowl and beat until soft. Gradually sift and beat in the icing sugar and cocoa powder then add enough milk to make the icing fluffy and spreadable.
6. If the cake has risen a little to high then use a serrated knife to even off the top, now sandwich the two cakes together with the butter icing and cover the sides and the top of the cake with more butter icing.
Don't forget to let the cake cool before you complete step 6.
I top mine with tiny bits of fudge or chocolate drops.

You are all putting me to shame! Is there no-one else out there who admits to preferring the eating to the cooking?

If I had to pick I'd definitely pick eating... but there is a certain satisfaction to eating (or having others eat) something that you've made which is really tasty. I'm just not a fan of prep work... chopping is a chore and I have on the odd occasion grated my nails which is not fun for anyone.Ms Thrifty wrote:You are all putting me to shame! It's true that appreciative eaters help make cooking worthwhile. I got rid of about half my cookery books and still have several dozen (2 shelves' worth) and keep cutting out recipes, so the intention is there. It's just the time - it would be at the expense of another interest, such as walking/reading/going to the cinema or theatre. Actually, that could be a "good thing about winter": I won't be out walking all day so I will have more time to stay in and cook.

As there has been a lot of talk about cakes just lately, I have just been out and b*ght yet another cookbook, I seem to be addicted to them!
b*ght this in Asda for £5, seems like a bargain as on amazon its £16!!
Hmm yummy the cakes and biscuits all look wonderful, now all I have to do is get cooking!!
