Don't worry, it was just one day, just be good today.

Diane sounds lovely, I'm not that organised, I had Oat so Simple & banana for breakfast 320 calories. I think I will have a chicken salad for tea later and maybe a sandwich or wrap & apple to take to work tonight.

Hello everyone, good to see you're all back fighting fit.

am back on the wagon and have established a walking group twice a week at work. Am watching my calorie intake too.

Hope to be back as a regular on this thread o/

Welcome back and well done on the walking group. Just remembering our afternoon tea in Edinburgh :D

Won't have time to exercise over the next 3 days due to long days at work :noo: Today is the easiest as its 8 until 6pm but need to do some studying for a course I'm going to on Wednesday evening.
Menu of the day:
Porridge (300 calories)
Cup a soup, beard roll and a weight watchers fromage frais (350 calories - although the roll is small its heavy hence a lot of calories)
Jacket potato with cottage cheese and pineapple with a salad (400 calories)
A banana (100 calories)
Possibly Cadburys Options later but haven't any in so if I have time I'll have one. It's my chocolate fix so I don't cheat :shifty:

What's everyone else up to today apart from Biggins who will be living it up on her holidays? o/

Hi guys

Just come in from a walk with Charlie (14 week old Cocker Spaniel) in the snow, he loves it but we were both soaked and cold. After a good dry and a mop of the floor (trying to catch Charlie to dry him off) i'm ready for Kind Hearts and Coronets and a hot chocolate (40 cals)

Snow is laying quite thick, the film is about to start and i can feel a few Zzzzz on the way.

Keep warm everyone and have a lovely healthy day

Sounds like a lovely way to spend the afternoon.

I've made shepherds pie for dinner tonight & actually been organised and prepared tomorrows dinner and put it in the fridge & made a shepherds pie to warm us all up tonight, just have to watch my portion size.

Now do I brave walking through the snow which is still coming down thick and fast to the school or defrost the car, whilst I'm all for a brisk walk, I hate being cold!

Its freezing up here too but no snow in the city, was through East Lothian today (remember your bus trip Diane?) and no snow through there either.....very surprised!! Can see it up on the hills though.

Will do some hula hooping while watching TV later as didn't brave the cold for a walk today.

Have been eating healthily all day and got a slow cooker in the sales so came in to a lovely chicken curry - here's the recipe;

cooking oil spray
1 onion finely chopped
2 garlic cloves crushed
25g fresh ginger finely grated
12 skinless chicken thighs
1tbsp medium curry powder
1 fresh chilli or 1/2 tsp powder
100g red lentils
400g chopped tomatoes
1tsp reduced salt chicken stock
200ml reduced fat coconut milk
500g butternut squash or pumpkin (i used a sweet potato and it worked just as good)
150g spinach
1/2 small bunch of fresh corriander (if you can't find fresh Morrisons does a good range of frozen herbs)



1 Spray large frying pan, add onion, garlic, ginger and cook until soft. Add the chicken and curry powder and cook for a few minutes.
2 Transfer to your slow cooker and add chilli, lentils, tomatoes, chicken stock, 450ml boiling water, coconut milk and squash/pumpkin/potato. Cook on high for 3 hr or low for 6 hr.
3 Add the spinach and coriander, stir well and leave to stand for 20 minutes.
4 Before serving with basmati rice, garnish with fresh coriander.

This recipe makes enough for 6 so just adjust the quantities according to your brood. Its only 439 cals per serving. If anyone wants the nutritional breakdown just let me know. o/

I chopped the onion, ginger and garlic and cut the potato the night before but it did take me a good 20 minutes to get everything in the pot before going to work. It was well worth it though as it tasted delish :p

Mmn, some lovely, healthy and tempting recipe ideas appearing here! I'm now thinking of making a "proper" shepherds pie and the chicken curry once OH goes away. As he's vegetarian, I've been looking forward to the opportunity to eat some meat, and now I have all the inspiration I need - thank you!

Loving the menus girls , allsinging it sounded like a lovely walk with your beautiful dog. Rainey your shepherds pie sounded perfect on a cold evening and havingascreen I will be making your curry at the weekend.

I am working from 8am until 8.30pm today so it be an exercise free day today and just 2 20 minute breaks hence sandwiches for both.

Menu of the day:
Belvita biscuits and a mango yoghurt (350 calories)
Garlic sausage salad sandwich on wholemeal bread and a weight watchers fromage frais (350 calories)
Sandwich slim with ham salad, slim a soup and a banana (400 calories)
I will definitely be b*ying a Cadbury's option and a cereal bar for supper (150 calories)

I have to admit the Shepherds pie was very good, it's a family favourite and doesn't take too much adapting for the veggy daughter, in a small pot just substitute with a medley of vegetables under the potato and grate some cheese on top and she's she's happy. I did try and persuade her to try some quorn mince and her reply was 'I don't like meat, so why would I want to eat pretend meat, no thank you!' Little madam.

Today we have beef casserole, prepared it all yesterday I put it in the slow cooker before I left for work at 6.30am this morning, when I walked back through the door it smelt lovely, got to be good again though and resist having too much! I too had Belvita biscuits at work this morning but I normally only have 2 & a cup of tea, I struggle to eat breakfast, a ham & pickle sandwich, an apple & satsuma.
