Its freezing up here too but no snow in the city, was through East Lothian today (remember your bus trip Diane?) and no snow through there either.....very surprised!! Can see it up on the hills though.
Will do some hula hooping while watching TV later as didn't brave the cold for a walk today.
Have been eating healthily all day and got a slow cooker in the sales so came in to a lovely chicken curry - here's the recipe;
cooking oil spray
1 onion finely chopped
2 garlic cloves crushed
25g fresh ginger finely grated
12 skinless chicken thighs
1tbsp medium curry powder
1 fresh chilli or 1/2 tsp powder
100g red lentils
400g chopped tomatoes
1tsp reduced salt chicken stock
200ml reduced fat coconut milk
500g butternut squash or pumpkin (i used a sweet potato and it worked just as good)
150g spinach
1/2 small bunch of fresh corriander (if you can't find fresh Morrisons does a good range of frozen herbs)
1 Spray large frying pan, add onion, garlic, ginger and cook until soft. Add the chicken and curry powder and cook for a few minutes.
2 Transfer to your slow cooker and add chilli, lentils, tomatoes, chicken stock, 450ml boiling water, coconut milk and squash/pumpkin/potato. Cook on high for 3 hr or low for 6 hr.
3 Add the spinach and coriander, stir well and leave to stand for 20 minutes.
4 Before serving with basmati rice, garnish with fresh coriander.
This recipe makes enough for 6 so just adjust the quantities according to your brood. Its only 439 cals per serving. If anyone wants the nutritional breakdown just let me know.
I chopped the onion, ginger and garlic and cut the potato the night before but it did take me a good 20 minutes to get everything in the pot before going to work. It was well worth it though as it tasted delish
