Delia Smith does a good curried nut roast which you can serve with Greek yogurt or with a simple tomato sauce which would counteract any dryness. My son doesn't eat meat and it does mean a bit of extra preparation but you can b*y lots of good vegetarian ready made things now --M&S for instance do stuffed peppers and mushrooms which are actually very reasonable and means you won't have to cook two separate main courses but still your veggie student will have something nice. But I'm sure Diane65 will come up with much better things than I could suggest anyway!

I can't imagine life without meat. Infact when I do have to opt for vegetarian options, my eyes almost pop out!

Thanks for all your advice, I have always thought it wrong to do a roast without the meat but as a few of you have said I could always replace it with a nut roast or quorn products and ejwrank I do like your ideas I will have a look at M&S it will make life easier.

I did notice the tone got lowered after a_person mentioned she liked her meat and her tone lowering friends joined in :nono:
