Our mega-talented Diane has kindly provided some photos of her recent superb culinary exploits to share with us all on the thread.

I for one am impressed....very impressed o/

Will you be taking orders, or indeed maybe even sending out samples to special friends? ;)

Perhaps you could provide us with a bit of a commentary to go with each of the pictures, Diane.

No false modesty mind :nono: You tell it like it is, girl! :D

Thanks so much to my talented friend Preston1990 for putting up the photos o/ And a massive thanks to my neighbour for all the plums o/

The first photo is the start of the apple and plum chutney made with onion, cloves, cinnamon, nutmeg(hence the dots on the fruit in case anyone thinks its dirt ;) ), ginger, garlic, cider vinegar and brown sugar which you just boil away for about 45 minutes then pop into sterilised jars and keep until Christmas. I. have kept a jar for myself and the other has been given to good friends

The second one is the plum and amaretti semifreddo just as I had finished making it before I put it in the freezer. This was lovely to make even though it says for the keen cook it is very easy to make. I made 4 tubs of it and have given 3 to my friends.

I made 2 plum crumbles just chopping the plums in half sprinkling with water, sugar and cinnamon before adding the traditional crumble topping but replacing half the flour with oats. I have given 1 to my neighbour and my mum has the other one but I intend to help her and my auntie with it tomorrow evening (I have asked her to pop it in the oven when I'm on my way home from Northampton (uni drop off).

Finally I made 4kg of jam cooking the plums whole to keep the pectin levels (lots of pectin in the stones so as a mid pectin fruit helps with the setting) plus a ton of sugar and finally lemon juice to help with the setting. This has been shared among 7 of us including sending a small tub up north to a certain Lord Preston1990 (along with a tub of chutney).

I don't think that I'm emotionally strong enough to seeing another plum this weekend :noo: I have enjoyed making it all but nothing at all belongs on this thread apart from a couple of plums I had with my lunch.

Breakfast was Special K.
It's the drop off day today so depending on how long the journey takes I hopefully can fit in a walk. Best journey was 2 and a half hours each way but worst was 5 and a half hours each way. Got West life and Russell Watson to keep me company so it's all good.

Have a fun day everyone

Good Luck on that uni journey, Diane. May it be smooth and traffic free. Hope that your lovely daughter has a very good year!

Okay, I'm back.

The bad news: I have gained a lot of weight. I'm also having more knee troubles.

The good news: I am back on the wagon as of today. I have weighed myself and started logging what I eat. I am back at the same physio (thanks, Bupa!) and after only two sessions, he says there's a massive improvement, so I may be able to start exercising again soon. I thought my leg was well and truly knackered, but apparently this time it's not that serious. I'm happy with that. o/

The other news: Part of why I've gained so much weight is from stress eating and celebratory eating - I now have a flat of my own! Once I properly move in (a little bit of work required) I can think about batch cooking and freezing portions. Having my own kitchen will make so much of a difference.

Given the problems with my knee, I'm not sure if I should go back to parkrun. My physio actually recommends parkour over running; running is apparently really bad for the joints!

Am thinking about joining the gym again. I hate the gym, but I need to get back in shape and if running is no good... Was thinking about making one day a regular exercise day (as in, do not go to the theatre!) and planning that in. Exploring local options! Sitting on the couch is not an option...

Great to have you back Asamaic and congratulations on getting your own place. o/ :cheer:

Sorry to hear about your knee problems, but losing the odd pound or two can only help with your recovery. I think there's a few of us on here who have put a bit of weight on, whilst we've been away, and have come back looking to lose some once more.

Yeah, I'd heard that too Asamaic. Stick with parkour, you wouldn't want to overdo things o/

Fab to hear the determination behind your words Asamaic. o/

I've recently started going to the gym as well and I'm finding it a bit of a slog to be honest. But I'm determined to keep going. In the main the people there are really supportive and friendly, but some can be a bit overly competetive....

Last week this really obnoxious guy was boasting, to anyone who would listen, about how many push-ups he could do. He turned to me and asked,

"How many reps would you usually do?"

"A million," I rep lied.

Sorry, I'll get my coat!

Haha! :giggle: I actually got that one, I'm so proud of myself! o/

And btw, what a *pert* plum that is miLord!! Definitely been workin out!! ;)

I'm not a fan of going to the gym for the same reason, Preston. People are so darn competitive. I don't go there to compete. I drag my lazy a$$ (on the rare occasions that I do) there to tone up or lose weight when the weather is too miserable to run. I hate running in the pouring rain more than....err...more than marmite! And the other irritating thing about gyms is the slimey arnie/sly-type guys who think that just because their muscles are bigger than elvis you're going to appreciate them hitting on you and swoon at their feet (yes, I said swoon). No. Thanks.

Diane, I'm coming over to yours to sample your culinary delights!!! ;) Talk about food porn!! :p Wow, you've really been whizzing around in the kitchen haven't you!!

There's definitely nothing like homemade chutney. My nan has been making homemade apple chutney ever since I can remember. We would climb the apple trees in her back garden, scooping up all those misshapen cooking apples and the whole house would soon fill up with the smell of fresh apple pies and apple chutney. Ahh...the good old days!

Oh and now I've just remembered Nan's elderflower wine. Oh boy... <insert licking-my-lips smilie here>

And nan was lovely like you are Diane, spreading the joy to family, friends & neighbours. In this day and age, that sort of generosity is something that is far too rare, in my opinion. Yes, I'm a cynical cow. But you are an absolute gem, Diane! o/

Oh and good luck to your daughter too. Uni is soooo much fun, I'm sure she'll have a blast...and study hard too! o/

Welcome back asamaic. How awesome is it to have your own place?!! Congrats lass!! Just don't go crazy b*ying loads of stuff right away. Take your time so you can choose pieces that you really want in your home.

As Preston said, any weight loss should help with improving your knee problems so don't give up, whatever you do. A pain-free life, is a good life so keep up with the exercise & healthy eating in a way that you find works and doesn't cause any other problems.

Well, as you a;; know by now, I'm like a nosy neighbour who likes to pop over now and then for a cuppa and a wee gossip. :p Keep up the good work girls n boys, you're always an inspiration. Adios xx

I love doing it and find it fun - I need a mission now all my DIY has been done.
The journey was very easy thanks and no hold ups and already having a M&S chicken with creamy mushrooms, green beans and new potatoes all for 281 calories. I cheated in case the traffic was bad.

Welcome back asamaic and so sorry to hear about your knee but fab news re getting your own place plus we will get there together. I didn't know that you were good friends with Canadian_Turtle so she will probably let you know re my love of socialising.

Thanks for being so lovely Sydney_Bristow it is more like I am leading everyone astray  but I do appreciate your kind words and you're welcome anytime.

I'm ashamed to say that after my healthy meal I'm just off to visit my Mum as she has already got the plum crumble in her oven (I didn't eat lunch so it's not all bad).

Downton Abbey is back on tonight and I have visions of our very own Lord Preston as Lord Grantham whereas I will be Mrs Padmore getting hot in the kitchen and busy bossing everyone around. I would really like to be like Lady Mary but in all her finery but that can be the new svelte me :shifty:

Glad the journey went well, Diane. I will not have you wishing to be Lady Mary though -- you are far too nice! Enjoy the plum crumble, visit to your mum's and Downton.
